If you have not had Tomato Pie before, you are in for a treat! It is a quintessential southern summer dish that you will never regret making and serving. So get some yummy ripe tomatoes and prepare yourself to crave it for years to come. I have tried a bunch of different recipes but this one comes to me from my sister-in-law, Kim, and it is the best I have ever had! And yes, I am well aware that this is not my usually relatively healthy recipe but it is ALL about balance. I choose to enjoy this recipe with abandon and not feel the least bit guilty about it.
Ingredients
- 1 9″ frozen deep dish pie crust
- 3-4 medium tomatoes, sliced, drained and patted dry
- salt and pepper
- 8 slices bacon, cooked crisp and crumbled
- 3 Tablespoons fresh basil or 1 Tablespoon dried basil, crumbled
- 3/4 cup grated parmesan (I think parmesan reggiano is best)
- 3/4 cup mayo (I use Hellman’s Real Mayo or make my own)
- 1 cup crushed Ritz crackers
Instructions
- In pie crust, layer tomatoes, salt & pepper, basil, and bacon. Repeat to make 2 full layers.
- Combine parmesan cheese with mayo and top the tomato layers with it.
- Sprinkle with Ritz crackers.
- Bake at 350 degrees farenheit for 30 minutes. Serve immediately and enjoy!
