If you love mashed potatoes but have been trying to add more vegetables to your diet or cut down on carbs, this recipe is for you. This recipe is super simple and can easily be paired with a million different dishes and help each one shine. I particularly recommend this with the Tasty Pot Roast. Ingredients
- 1 head of cauliflower, cut into florets
- 2 tablespoons butter or ghee
- salt and pepper to taste
- 2/3 cup unsweetened almond milk (or regular milk)
- 2 cloves of garlic, finely minced
Instructions
Steam the cauliflower florets in a steamer basket for 8 minutes. Remove from heat. In a blender or a food processor (you could also use an immersion blender) add the hot cauliflower. Add all the other ingredients and blend until smooth. Serve immediately.
