I love a good ole buffalo wing, particularly to enjoy while watching a football game. But to find a recipe that eliminates gluten, is grain-free and is really healthy…oh! What a win! Sorry that I did not get this post out in time for your Super Bowl party but it was absolutely AMAZING at my personal Super Bowl party with my hubby and son. I will try to remind you next year! This recipe is roughly adapted from Kelly Nardo at #eatthegains and it is super easy, super delicious, and will have you thinking, “Who needs gluten anyway”? Let’s make these this weekend!
Ingredients
- 1.5 pounds chicken breasts, pounded and then cut into 1-1.5″ chunks
- 2 large eggs, whisked
- 3/4 cup almond flour
- 1/4 cup plus 2 tablespoons tapioca flour
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- avocado oil or olive oil spray
- New Primal Buffalo Sauce or Frank’s Traditional Hot Sauce to coat
- Ranch and/or blue cheese dressing, carrot sticks, celery and extra hot sauce for serving
Instructions
- In a small bowl, mix together the almond flour, tapioca flour, and all spices and set aside. In another bowl, add the eggs and whisk. Set up an assembly line with cubed chicken, eggs and flour mixture.
- Dip the chicken in egg making sure to fully coat. Let extra egg drip off and then roll in the flour mixture until coated and let any extra shake off. Place on a plate and repeat with remaining chicken.
- Place chicken in air fryer basket, spreading them out but leaving room between each piece so that the air can easily flow through. Spray lightly with avocado or olive oil. Close drawer and set air fryer at 375 degrees F for 15 minutes. At halfway mark, shake them up but make sure they are still spaced evenly.
- When chicken is done, carefully toss them in Buffalo or hot sauce being careful to not take off breading.
Notes
You will probably need to cook these in more than one batch in order to make sure they cook thoroughly and are not overcrowded.
If you do not have an air fryer, do not dismay. You can crisp these up in the oven at 400 degrees F but you will have to figure out the cooking time for yourself as ovens vary too much for me to guess yours…
