I like my banana bread straight up, unadulterated by chocolate chips or by nuts. And this recipe is virtually foolproof and perfect every single time. It makes your house smell delicious and when it cools down, there is nothing finer.
Ingredients
- 1 stick butter, room temperature
- 1 cup sugar
- 2 eggs
- 1.5 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3 bananas, ripe or overripe, smashed with a fork
Preheat oven to 350 degrees. Grease and flour a loaf pan. Set aside. Cream sugar and butter together with an electric mixer. Add eggs one at a time and beat well. Add dry ingredients slowly until well mixed. Add vanilla and then smashed bananas.
Pour into loaf pan and bake for 1 hour. Allow to cool fully before serving. Store in an air tight container.
