This is an upscale chicken salad that is delicious if you like stinky cheese. I LOVE stinky cheeses and this chicken salad is decadent yet easy to make. Impress your friends and welcome a classic into your recipe box!
Ingredients
- 4 whole boneless chicken breasts (8 halves), boned, skinned and boiled for 20 minutes in water
- 1 cup diced celery
- 1.5 cups of red seedless grapes, halved (can substitute apple or dates)
- 3/4 cup pecan halves
- Bleu Cheese Sherry dressing
Cut chicken into 1 inch chunks and combine the chicken, celery, grapes and pecans in a large bowl. Make mayo. Toss chicken salad with mayo. Refrigerate until cold.
Bleu Cheese-Sherry Mayo ingredients
- 2 egg yolks
- 1 cup crumbled bleu cheese or roquefort cheese
- 1 tablespoon dijon style mustard
- 1 tablespoons sherry vinegar
- 1.5 cups avocado oil (or vegetable oil)
- salt and pepper
Process egg, mustard and vinegar in a food processor or blender fitted with a steel blade just to combine, about 30 seconds. The with machine running, pour oil in a thin, steady stream through the feed tube to make a thick mayo. Add bleu cheese (or roquefort) and process until combined but not smooth. Season to taste with salt and pepper.
