Do you have someone in your house who habitually skips breakfast? Well, then this recipe will be your friend! It combines yummy ingredients to give your non-breakfast eater some fast energy or your great breakfast eater an I-am-in-a-hurry-can’t-stop-to-eat option. It is great on the go or for road trips and can be a perfect afternoon snack as well.
Ingredients
- 1&1/2 cups flour
- 1 teaspoon baking soda
- 1 cup (2 sticks) of butter, room temp
- 2/3 cup firmly packed brown sugar
- 2/3 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1/4 cup water
- 2 cups Grape Nuts cereal
- 2 cups raw quick cooking oats
- 1 cup raisins (or dried dates or dried cranberries)
Preheat oven to 375 degrees. Mix flour and baking soda in a small bowl. Set aside. Beat butter in a large bowl with an electric mixer on medium until creamy. Gradually add sugars, beating until light and fluffy after each addition. Add egg and vanilla. Mix well. Gradually add flour mixture and water alternately, beating well after each addition. Add cereal, oats and raisins. Stir until blended.
Drop rounded tablespoons of dough onto ungreased cookie sheet. Bake for 10 minutes. Cool completely on wire racks. I freeze mine in large freezer bags after completely cooled.
