This salad is pretty, crunchy, and delicious! It could easily be a complete vegetarian meal or a yummy side dish. It is terrific served with barbeque, or pairs beautifully with fish, and livens up a cheesburger meal. I particularly like to serve it in bowls with steamed white rice and my carnitas (recipe on the blog). My kids love to wrap it all in a tortilla.
Ingredients
- 1/2 small green or purple cabbage, sliced as thin as possible and chopped
- 1 red apple, sliced as thin as possible and chopped
- 1/4 cup pistachios, chopped
- 1/3 cup salted peanuts, chopped
- 1 overflowing Tablespoon honey
- juice of 1 lemon
- 1/2 teaspoon salt
- 3/4 teaspoon chili flakes
Instructions
- Chop all cabbage, apples and nuts and add them to a medium size bowl.
- Mix honey, lemon juice, salt and chili flakes.
- Pour honey mixture over the cabbage slaw and mix thoroughly. Enjoy!
Notes
- When I serve this salad with carnitas and rice, I usually leave out the nuts.
