I used to just make this for special occasions and then I realized that I could use it as a main dish or as a substitute where I would usually have mac’n’chz, or instead of a potato dish. It is fabulous served alongside a spicy shrimp or chicken dish but can also hold its own alongside steak. It is perfect for breakfast (with pancakes and bacon) or for dinner (with anything) and the leftovers stay good in the fridge for a good while. Don’t be scared! I am not a fan of plain grits but I simply cannot get enough of this cheese grits casserole!
Ingredients
- 1 cup grits
- 1 teaspoon salt
- 4 cups of water
- 1 stick of butter
- 4 ounces of shredded Velvetta cheese (or in small chunks)
- 4 ounces of shredded sharp cheddar cheese
- 3 eggs, lightly beaten
- 1/3 cup milk
Cook grits in salted water until the water is absorbed into grits. Stir in all other ingredients and stir constantly until smooth and cheeses are melted. Turn down the burner if necessary so that the bottom of pan does not burn. Place in greased 1&1/2 quart casserole dish and bake for 1 hour. Serve while hot. Enjoy!
