You know it is good when your youngest child and pickiest eater declares it the best thing he has ever even! Super healthy, extremely tasty, and can be made quickly. I call that a win all around!
Ingredients
- 1/4 cup avocado oil
- 3 tablespoons fresh lime juice
- 1 teaspoon sugar
- 1/2 teaspoon toasted sesame oil
- 1/2 tablespoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 head of romaine lettuce, torn into bite size pieces
- 1/2 cup shredded carrots
- 4 cups of meat from a shredded (2-2.5 lb) rotisserie chicken
- 1 tablespoon toasted sesame seeds
- 1 cup crispy chinese noodles
- 1/4 cup fresh chopped cilantro leaves
In a large bowl, combine the lettuce, carrots and chicken.
In a small bowl combine the avocado oil, lime, sugar, sesame oil, red pepper flakes, salt and pepper. Whisk to stir.
Toss salad with dressing and then sprinkle with sesame seeds, noodles and cilantro. Taste it and if the dressing is not “popping” enough, add another quirt of lime juice and a little more salt and pepper. Serve cold!
