These chipolte shrimp are simply the best! The recipe is slightly modified from @thewholesmiths and it is truly delicious. The marinade is a spicy perfection that does not overwhelm the dish or have you gasping for water! But this is a recipe you will reach for again and again. I have also put this marinade on chicken and that was fabulous too. Serve with some grilled vegetables and you will be in heaven!
Ingredients
- 3/4 cup olive oil
- 1/2 cup chopped fresh cilantro
- 4 cloves garlic, minced
- 1/4 cup fresh lime juice (about 3 limes)
- 1 tablespoon ground chipolte pepper
- 1 teaspoon salt
- 1 pound large deveined shrimp, peeled
In a large zip top plastic bag, combine the olive oil, cilantro, garlic, lime juice, chipolte seasoning, and salt. Seal the bag and toss to thoroughly combine. Take out 1/4 cup of marinade to reserve for basting the skewers as they cook. Add the shrimp, seal the bag and toss to coat. Set aside to marinade at room temperature for at least 1 hour. While the shrimp is marinading, soak the wood skewers in a shallow bowl with water so they will not burn as easily on the grill.
Heat outdoor grill to high heat or heat a grill pan over high heat.
Thread the marinaded shrimp onto skewers. Grill for 3 minutes per side, brushing on the reserved marinade as they cook.
Serve immediately. Enjoy!
