This Ambitious Kitchen recipe is a fun, fast and delicious snack idea to sneak in some protein in the guise of a treat. If I had this recipe in the days when my children were still coming home ravenous and searching for a tasty snack, I would have led with this one, served with bananas, strawberries, and a few pretzels. And if I never let on that it is “healthy”, they would gobble it up every afternoon!
Ingredients
- 1 (15 oz) can of chickpeas, rinsed and drained (skins removed if you want extra creamy hummus!)
- 1/3 cup drippy tahini (or 1/2 cup peanut butter or other nut butter)
- 1/3 cup unsweetened cocoa powder or cacao powder
- 1/2 cup pure maple syrup
- 1/4 cup milk of choice (I use vanilla almond milk) plus more if necessary to thin
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- optional: ⅓ cup mini chocolate chips (dairy free if desired)
For Serving
- Berries, crackers, pita chips or pretzels
Instructions
Put all ingredients (except chocolate chips) into a food processor or blender and blend until smooth. Taste for consistency and sweetness and make necessary adjustments. Mix in some of the chocolate chips and sprinkle a few on top. Will keep for about a week in the fridge (but it won’t last that long).
