This recipe has been a family favorite for years and never seems to get old. It is easy and light, yet filling enough for a crowd of growing boys!
Ingredients
- 1 lb lean ground beef
- taco seasoning pack
- 1-1.5 heads iceberg lettuce
- 2 tomatoes
- 1/2 bag of smashed tortilla chips (if you are trying to stay grain free Siete brand is amazing)
- 1 cup shredded Mexican cheese blend
- salsa
In a skillet, brown the beef. Drain the excess fat off and then season with taco seasoning. Follow directions on the seasoning. Set aside. Tear up the iceberg lettuce into bite size pieces. Cut tomatoes into fourths and remove the seeds and gooey innards. Dice the remainder of the tomatoes and place in big bowl with iceberg lettuce. Add the cheese and toss well. Right before you are ready to serve, add the seasoned ground beef and the smashed chips. Toss well. Serve immediately topped with a scoop of salsa.
