This casserole is so easy and so delicious you will not believe it! It does not photograph well but its tastiness makes up for the fact it doesn’t win Most Photogenic in the yearbook. My mother made this dish for me when I was young and I could not be any happier to re-discover it! You will love it too!
Ingredients
- 12 slices Canadian bacon (usually one package)
- 12 eggs
- slices of aged swiss cheese to cover (depends on size of slice but usually 4-8 slices)
- about 1/3 cup of half & half (or whole milk)
- parmesan cheese
- salt and pepper
Preheat oven to 350 degrees. Spray bottom of 2 quart rectangular pyrex dish with cooking spray. Line bottom with 12 slices of Canadian bacon. Lay slices of swiss cheese to cover the bacon. Crack eggs one at a time and try to position each one over a slice of Canadian bacon (start in the middle and move outward). Drizzle with half & half. Salt and pepper.
Place in a pre-heated oven for 10-12 minutes or until eggs start to settle. Remove from oven and sprinkle with parmesan. Return to oven for about 5 minutes (less for runnier eggs, maybe a tad more for more cooked yolks). Serve immediately!
