A friend brought this bread to me after I had had some unpleasant procedure and it was love at first bite. I can no longer remember which procedure and I am not positive which friend (Elizabeth Howells, was this you?) but the recipe has stuck with me. It is not too sweet but it is just right! It makes a great gift or a special treat for your favorite family members.
Ingredients
- 4 cups all purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup mixed dried fruit (today I used a combo of dried cranberries, golden raisins and cherries)
- 3/4 cup of corn oil (or other mild oil like vegetable)
- 1 cup buttermilk
Preheat oven to 350 degrees.
Mix dry ingredients together. Cut in oil (use a pastry blender or 2 knives). Add dried fruit. Add buttermilk and blend well by hand. Form 2 rounds and place on greased cookie sheet. Press down with palm of hand. Bake for 40 minutes.
