This recipe is yet another slightly modified #defineddish recipe and this one is a keeper for many reasons. First, it is a healthy and a super hearty salad. Even the boys are satiated after enjoying this big honker salad. Second, the dressing is absolutely drinkable; it is so good. My children have put it on sandwiches, and I have put it on other salads. I have also tossed it into warm pasta to wonderful effect. I routinely make a 6x or 8x recipe of the dressing so we can enjoy it every way we choose.
Ingredients/salad
- 1 bunch of green kale (about 6 cups). Washed, stems removed and leaves chopped
- 1/4 cup freshly chopped mint
- 1/2 cup chopped cashews
- 1 rotisserie chicken, skin removed, meat cut into bite size pieces
Ingredients/dressing
- 1 clove garlic
- 1 teaspoon freshly grated ginger
- 1 teaspoon toasted sesame oil
- 2 tablespoons almond butter
- 3 tablespoons rice vinegar
- 1 tablespoon fresh lime juice
- 1 teaspoon chili oil
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons coconut aminos (or soy sauce)
- salt and pepper
Instructions
- In a food processor or blender, combine all dressing ingredients and blend well to combine. Set aside.
- Put all salad ingredients together in a large bowl and thoroughly toss with dressing.
Kale does not wilt very easily so you can toss it and not have to serve immediately
