My kids lovingly named this Sweaty Chicken because I love to heat it up and it makes everyone at the table sweat when I turn up the spice! But you can add a little or a lot, depending on your flavor profile but even when it is not very spicy, this chicken is flavorful and delicious!
Ingredients
- 5-6 chicken breasts, cut into cubes
- 6 tablespoons tapioca flour (or arrowroot or corn starch)
- 6 tablespoons avocado or olive oil
- 1 teaspoon freshly grated ginger
- 4 cloves garlic, minced
- 2/3 cup coconut aminos (or low sodium soy)
- 2/3 cup water
- 1/2 cup brown sugar
- 1 tablespoon (heaping) red pepper flakes (this much makes it spicy but not out of control. You can start with as little as 1 teaspoon and add as you wish)
Pat chicken pieces dry and then toss with tapioca (arrowroot or corn starch). Shake off excess tapioca.
Mix together coconut aminos (or soy), water, brown sugar, red pepper flakes, ginger, and garlic. Set aside.
Over high heat, heat 3 tablespoons of oil until it shimmers then add the chicken. Do not overload the pan. Cook in batches to give chicken the chance to brown. Cook for approximately 3 minutes per side. When you remove it, the outside should be brown but maybe not cooked all the way through.
Put sauce on stove on medium heat and add the chicken to it. Toss to fully coat and allow the chicken to finish cooking while the sauce thickens up.
Serve immediately over rice, cauliflower rice or over grilled vegetables. Enjoy!
