This recipe is a treat we can all get behind! Easy to make and delicious to devour…I call that a win-win situation.
Ingredients
- 1 (15.25 ounce) box of Duncan Hines Butter Golden Cake Mix (vanilla)
- 1/2 cup avocado oil
- 1/4 water
- 1 large egg
- 1 stick butter, softened
- 1/2 cup brown sugar
- 2 cups old-fashioned rolled oats (do not use quick oats)
- 1 (10 ounce) bag of Reese’s Peanut Butter Chips (or the same size bag of semi-sweet chocolate chips)
Instructions
Preheat oven to 325 degrees and line a 9″ x 13″ metal baking pan with parchment paper.
In a large mixing bowl with paddle attachment, combine avocado oil, water. egg, softened butter, brown sugar and 1/2 bag of vanilla cake mix. Mix at medium speed until well combined.
Add the other half of cake mix and oatmeal. Mix over medium speed until just combined. Fold in the peanut butter chips (or chocolate chips).
Spread into pre-prepared baking pan and spread into an even layer using a rubber spatula.
Transfer to pre-heated oven and cook for exactly 30 minutes (no more and no less). It may appear to be undercooked but take it out after 30 minutes anyway. Allow to cool for a minimum of 30 minutes before lifting the parchment out of baking dish and cutting it into bars. Once it has cooled completely, put the bars in an airtight container and put them in the freezer. JUST DO IT! Eat them directly from the freezer for an ultra-gooey, wonderful treat!
Notes
I also love this with half of a bag of chocolate chips and half a bag of peanut butter chips but you can pick your preference. If you use quick oats instead of old fashioned rolled oats, they will NOT be good. I bear no responsibility for your failure (LOL). Substituting grain free boxed yellow cake mix did not work out well either! Enjoy and let me know if you love them!
