Peach season is upon us and I am so excited to make all the peachy delicious desserts and side dishes! These cookies are soft, chewy, scrumptious, and wonderful as a summer treat. People will definitely invite you to their next barbeque with the caveat that these cookies are the price of admission. No peach cookie = No barbeque for you! But they are not difficult to make so you won’t mind. I love eating them straight out of the fridge but they are also delicious served warm with a scoop of ice cream on top. Preheat the oven and prepare to fall in love! These are a slightly modified recipe from healthienut by Taavi Moore. One recipe makes approximately 12 cookies.
Ingredients
- 1/2 cup butter, melted
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 2 Tablespoons milk
- 1 Tablespoon corn starch
- 2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 & 1/2 cups all purpose flour
- 2-3 Tablespoons light brown sugar
- 3 peaches, thinly sliced
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together melted butter, 1/2 cup brown sugar, sugar, milk, corn starch, vanilla, cinnamon, baking soda, and salt until well combined. Fold in flour until soft dough forms.
- Sprinkle about 1/2 teaspoon of brown sugar onto the parchment paper on the baking sheet. Place 4-5 slices of peach over the brown sugar. Top with a scoop of cookie dough (about 1.5 Tablespoons worth) and lightly press cookie dough down with the palm of your hand so the peaches will stick to the dough.
- Repeat previous step for each of the remaining cookies.
- Bake for 12 minutes or until lightly golden.
- Remove from oven and lightly tap the baking sheet on the counter. Cool for 10ish minutes on the baking sheet before tranferring to a wire cooling rack lined with parchment or wax paper.
- While still warm, dust the peach side with a small amount of powdered sugar.
- Serve warm, cold, or with an optional scoop of vanilla ice cream.
- If any are left, store in the fridge in an airtight bag. Enjoy!!!
