This shrimp and pasta dish is warm and rich and easy to throw together. It is one of the recipes that my kids request the most (when the one allergic to shellfish is not around) and one they rave about constantly.
Ingredients
- 1 box of spaghetti, cooked in salt water and drained
- 5 tablespoons butter
- 5 tablespoons olive oil
- 1 pound shrimp, peeled and deveined
- 3 cloves minced garlic
- 1 cup grated parmesan/reggiano cheese
- 1/2 cup chopped fresh dill
- salt
- fresh ground pepper
- optional: 1/4 cup fresh chopped parsley
Cook pasta in salty water according to the directions on the box. Drain. Set aside.
Put butter and olive oil in skillet and heat. Add garlic and cook until fragrant, about 1 minute. Add the shrimp and cook until shrimp are opaque.
Combine hot, cooked shrimp with pasta, parmesan/reggiano cheese, dill, salt and pepper to taste and parsley (if it doesn’t make your children cry). Serve immediately.
