I bought a flat of the most delicious strawberries from my local farmer. I ate quite a few, froze some for smoothies and still had a LOT leftover. So, I was dreaming of a healthy chocolate spread to dip them in and started puttering in the kitchen to see what I could come up with. HOLD ON TO YOUR HATS PEOPLE! The result of my puttering is a healthier-for-you chocolate spread that will knock your socks off, and your hat if you aren’t holding it! It is at its best served warm but it is also delicious cold. And once I tried it on strawberries, I had to try it on bananas and pretzels. This recipe is a homerun…it is delicious, has protein and healthy fats and will satisfy the toughest chocolate critic!
Ingredients
- about 1.5-2 cups pitted dates, roughly chopped
- boiling water to cover dates
- 5 tablespoons 100% cacao dark chocolate Hershey’s cocoa
- 4 tablespoons pure maple syrup
- 1 cup pulverized cashews (or hazelnuts if you want it to have more of a Nutella flair)
- 1 4 ounce 45%-60% cacao sweet chocolate bar, chopped small
- 2 avocados
Instructions
- Roughly chop dates and then pour boiling water over them until covered, allow to soak for 20-30 minutes.
- Pour dates AND the water into a sauce pan and add maple syrup and Hershey’s cocoa mix.
- Pulverize a cup of cashews or hazelnuts in a blender or food processor until they are powder (flour like consistency); add nuts to sauce pan.
- Add chopped chocolate bar and allow to boil, mixing well the entire time. Once chocolate bar is fully melted and mixture is well-mixed, remove from heat.
- Add flesh of 2 avocados. Mix well until smooth with an immersion blender, regular blender, or food processor.
