We are sushi lovers but have not mastered the making of sushi rolls and such. But we have totally mastered this recipe (modified to our taste from @thedefineddish) and it is one of the most requested recipes I make. It is exploding with flavor, full of good proteins, vegetables and healthy fats. Give them a poke bowl and they are happy! You will love this if you love sushi and maybe even if you don’t!
Ingredients
Kale Salad
- 1 big bunch of kale
- 2 tablespoons olive oil
- 1 teaspoon toasted sesame oil
- 1 lime, juiced (zest the lime first to use in the poke and then juice it, set zest aside)
- 2 tablespoons coconut aminos (or soy)
- 2 tablespoons rice vinegar
- 1-2 tablespoons wasabi
- salt and pepper
- 1 tablespoon toasted sesame seeds
Remove kale stems and discard. Wash and dry the kale leaves. Chop into bite size pieces. Combine all ingredients and toss to coat. Set aside to marinade together for a minimum of 20 minutes.
Poke
- 1 lb sushi grade tuna
- 4-8 sheets, seaweed snacks roughly cut (I use clean scissors)
- 4 scallions (white and green parts), thinly sliced
- 2 tablespoons cilantro
- 1/2 cucumber, peeled and thinly sliced (I use English cucumbers because they have less seeds)
- 1/2 jalapeno, seeded and thinly sliced, then chopped
- 2 tablespoons olive oil
- 2 tablespoons coconut aminos (or soy)
- 1 teaspoon freshly grated ginger
- 1 clove garlic, minced
- 2-4 tablespoons wasabi (it can be very spicy so if not familiar with it, maybe start small)
- zest of 1 lime
- kosher salt to taste
- wasabi peas (for garnish if you like them)
Using a very sharp knife, dice tuna into small pieces (do this before it is fully defrosted or put the tuna in the freezer for 10-15 minutes prior to cutting). Place cut tuna in a bowl with seaweed, cucumber, avocado, scallions, jalapenos and cilantro. Do not toss yet!
In a small bowl combine olive oil, coconut aminos, ginger, garlic, wasabi, and zest of the lime. Whisk together and gently toss with the poke ingredients. Serve cold on a bed of kale salad, topped with wasabi peas. Dig in!
