I am here to tell you that spirulina is the one ingredient that is not in your kitchen but needs to be! Gram for gram, spirulina is the single most nutritious food on the planet. It provides Omega-6 and Omega-3 fatty acids. It is loaded with nutrients and antioxidants that benefit body and brain. It contains protein, vitamin B1, B2, B3, copper, iron and trace amounts of potassium and magnesium. It fights free radicals and reduces inflammation, and can reduce blood pressure. Spirulina is effective against anemia, can aid in controlling blood sugar and improves muscle strength and endurance. So, THAT is why I added it to this soup. Plus, it makes everything a really virulent shade of green. I am just sorry I did not experiment with it before St Patrick’s Day! So where do you find spirulina powder? A lot of places offer it but I ordered mine from Thrive Market online, but also know you can order it from Amazon. You can add it to a TON of things, but especially soups and smoothies.
This recipe is really a riff on my Cauliflower Soup recipe but has its own flavor and nutrient profile. It is super tasty and will keep you full for hours! And after reading how good it is for you, just TRY to not feel healthy and bursting with superpowers after you eat this soup!
Ingredients
- 2 teaspoons of olive oil
- 1 yellow onion, loosely chopped
- 4 stalks of celery, chopped
- 2 cloves garlic, minced
- 2 or more broccoli crowns, cut into florets
- 4-8 cups of chicken broth, beef broth, or bone broth
- salt and pepper
- 1/8 teaspoon cayenne pepper (optional for a little hint of spice)
- 1 tablespoon spirulina powder
Instructions
- In a large pot, heat 2 tablespoons olive oil over medium-high heat. Add the onions, celery, garlic, a pinch of salt and pepper and saute for 5-7 minutes or until onions are tender.
- Add broccoli florets to the pot and then pour the broth until it just covers the broccoli. Add another pinch of salt, pepper, and cayenne. Turn heat down to medium, cover the pot and let simmer about 20 minutes, stirring occasionally. Broccoli should be very tender when pierced with a fork.
- Once broccoli is tender, use an immersion blender, blender or food processor to puree until soup is very smooth. If using a blender or food processor, blend in small batches to avoid making a huge mess.
- Taste the soup to see if it needs more salt or pepper and then add spirulina. Blend well. Garnish any way you like!
